Pal-appam is a popular breakfast dish in Kerala, served with vegetable, mutton or chicken stew. Alternatively it is served as a starter dish with fish curry for formal meals. Pal-appam is a white lacy crepe-like cake with crispy brown edges.
The dish is traditionally made using a cast-iron wok called an ‘appachatti’. The main ingredients required are rice flour, coconut milk, yeast, sugar and water. Due to the fermentation required the ingredients are usually prepared the night before serving this delicious meal.
