Cardamom is known as the “Queen of Spices” and Kumily is known to have the biggest cardamom market in the world. Exceptional care goes into growing this spice. It needs a minimum altitude of 800 to 1200 meters above sea level and plenty of shade and water. Kumily is located at 1100 meters with an average annual rainfall of 3000 millimeters, making it the perfect atmosphere for the plant to thrive.
Cardamom has a diverse influence on Indian cuisine, found in everything from coffee and tea and milk-based drinks to starters, main course and even desserts. The peak growing season for cardamom is August to December. It grows to a height of 10 to 12 feet and can be harvested from its second year after plantation.

I am crazy about cardamom, but I never knew what the plant looked like. The leaves remind me of ginger. It’s interesting that the seed pods are that close to the ground. A Gujarati friend introduced me to Shiro, a sweet semolina (?) pudding flavored with cardamom. Left to my own devices, that would be all I ate.
