Kerala pappadams make a very popular side dish served with Kerala sadya (meals like the own depicted below). The main ingredients of pappadams are black gram (a type of lentil flour) and salt.

They are crispy, thin, and round, and are typically crushed over a mixture of rice and various liquidy garnishes to help pack the food together on its way to the mouth!
