Pesaha Appam is a traditional food made by Kerala Christians only during Maundy Thursday, the Thursday of holy week. The eldest member of the family blesses and cuts the Appam and distributes it to the rest of the family members.
The primary ingredients of the Pesaha Appam are rice flour, black gram dal, cumin seeds, garlic, coconut and salt. All ingredients are mixed well with water and the batter is poured into a lightly greased round pan. A cross made from palm leaf is placed in the middle of the batter before steaming.
