Coconut Toddy – Kallu
Popularly known as kallu, toddy is Kerala’s own coconut liquor. In fact, kallu is probably the first (and perhaps the only!) Malayalam road sign a tourist will learn to read. Made from the sap of the coconut flower before it blooms, the drink gives no intoxication when freshly tapped, but the level of alcohol increases as it ferments.
