We all enjoy eating bread, whether it is gluten- or wheat-free, whole grain, French baguette, Italian ciabatta, or any of the myriad other styles of baking. In a new book called The New Bread Basket, author Amy Halloran explores, as her subtitle explains, “How the New Crop of Grain Growers, Plant Breeders, Millers, Maltsters, Bakers, Brewers, and Local Food Activists Are Redefining Our Daily Loaf.” An excerpt, via GreenBiz.com, follows:

People will keep studying one another and drawing on their ingenuity to build sustainable farms and food systems. Alan Scott jump-started a new old-fashioned approach to bread with his oven plans, offering an alternative route to a food that had been industrialized. Other innovators are fiddling with ovens and mills, turning dairy tanks and silo bottoms into malt systems, scaling down equipment and deindustrializing processing. They are making tools to fit a future they are shaping.

We’ve featured a post solely dedicated to cranberry bogs in the past, and have also seen some of the classic holiday sauce as part of a Thanksgiving art celebration. Now, with Thanksgiving Day coming up in the United States on Thursday, we’re learning even more about the North American fruit from Science Friday’s Thanksgiving Science Spotlight:

There are certain things that might come to mind when thinking about cranberries: A certain shade of red, a certain small size, and a certain kind of tartness. But these characteristics can differ among cranberry varieties—of which there are more than 100, according to Carolyn DeMoranville, an associate extension professor and station director at the University of Massachusetts-Amherst Cranberry Station.

Because Coffee is ‘Human’

For those who believe life begins after coffee, the story of its origin will definitely sound familiar. Coffee grown worldwide can trace its heritage to the ancient coffee forests on the Ethiopian plateau, where legend says the goat herder Kaldi first discovered the potential of these beloved beans. It is said that Kaldi discovered coffee after noticing that his goats, upon eating berries from a certain tree, became so energetic that they did not want to sleep at night. Kaldi reported his findings to the abbot of the local monastery who made a drink with the berries and discovered that it kept him alert for the long hours of evening prayer. The abbot shared his discovery with the other monks at the monastery, and slowly knowledge of the energizing berries began to spread.

Now photographer Sebastiao Salgado takes readers deep into that grind with his latest collection, The Scent of a Dream: Travels in the World of Coffee that looks at the landscapes and labors behind the $100-billion-a-year business in ten countries around the globe.

Farming in the Arctic? Well, it can be done. The reasons are many. For one, the climate is changing: Arctic temperatures over the past 100 years have increased at almost twice the global average.

On a misty fjord in Greenland, just miles from the planet’s second largest body of ice, Sten Pedersen is growing strawberries. Yellowknife, a Canadian city 320 miles below the Arctic Circle, hosted a farmers market this summer. And a greenhouse in Iqaluit, the capital of the vast Canadian Inuit territory of Nunavut, is producing spinach, kale, peppers and tomatoes. The frozen tundra of the Arctic is experiencing something of an agriculture boom. More

The 68th UN General Assembly declared 2015 the International Year of Soils. It aims to increase awareness and understanding of the importance of soil for food security and essential ecosystem functions. According to scientists, soil is being eroded faster than that the Earth can replace it. So the next time the words ‘dirt cheap’ come up, think again and take not the soil below your feet for granted.

Dirt is not only rare, but it’s complicated. To the uninitiated, dirt may look like grubby generic mush, but actually it has character, individuality, and a taxonomy all its own. Soil scientists recognize twelve major orders of dirt, each divided into suborders, groups, subgroups, families, and series, according to its various allotments of minerals and organic matter. Each dirt has a pedigree. Furthermore, dirt is proactive. It’s not an inert blanket; it’s a dynamic entity.

The ongoing civil war in Syria has led to the first-ever withdrawal from the Svalbard “doomsday” Global Seed Vault, a giant storage unit for plant seeds that’s tucked into the side of a frigid mountain in Norway. In the seven years since the Vault opened, hundreds of thousands of seed samples have gone into its icy tombs. And not one has come out—until now. This week the International Center for Agricultural Research in Dry Areas asked for the return of 325 little black boxes of seeds it had stored in the Svalbard vault. For many years, the center housed its own seed bank near Aleppo, Syria. Now, its scientists hope to use the Svalbard samples to regenerate that collection outside of their war-torn home.

Basil, strawberries and lettuce are being grown 30-feet underwater off of the Noli coast in Italy. A team of ‘diver gardeners’ have taken advantage of a surprising opportunity and have found that actually, a least on a  small scale, growing vegetables underwater can be highly successful. There are a number of advantages to growing underwater – a steady temperature, the absence of aphids and the atmosphere is CO2 rich. The products are grown in oxygen filled ‘bubbles’, which are tethered to the ocean floor.

Jackson, Wyoming, is an unlikely place for urban farming: At an altitude over a mile high, with snow that can last until May, the growing season is sometimes only a couple of months long. It’s also an expensive place to plant a garden, since an average vacant lot can cost well over $1 million. But the town is about to become home to a vertical farm. On a thin slice of vacant land next to a parking lot, a startup called Vertical Harvest recently broke ground on a new three-story stack of greenhouses that will be filled with crops like microgreens and tomatoes.

Where is the US’ Water Going?

Freshwater in the United States is really on the move. Much of the water pulled from underground reservoirs called aquifers gets incorporated into crops and other foodstuffs, which are then are shuttled around the country or transferred as far away as Israel and Japan, according to a new study. It shows how reliance on a finite supply of groundwater for agriculture threatens global food security. More than 18% of the U.S. supply of so-called cereal grains like corn, rice and wheat depends on a limited supply of groundwater found deep below the earth in aquifers, researchers found.

Cornell Orchards Stick to Free Bees

Earlier this spring, instead of hiring commercial honeybee keepers to bring in their hives to apple orchards, Cornell decided to try relying solely on wild bee species for pollination of the blossoms at their Ithaca site. Based on research from the university’s entomology department, the Cornell Orchards knew it had a robust population comprised of twenty-six different wild bee species among the Ithaca apple trees. They counted on this local bee life to do all the pollinating work that the imported European honeybees would have done, and by the end of May it was clear that a full crop’s worth of flowers had been pollinated! We’ve featured plenty of stories about the deeply troubling colony collapse disorder in Apis mellifera and are always eager to emphasize the importance of pollination, so it may seem strange to celebrate the non-use of European honeybees in this case, but the main point here is that the value of wild native bee species should not be forgotten! If commercial honeybees continue to struggle, alternative methods of pollination will be necessary, and fostering local biodiversity is a great way to compensate for that potential eventuality.

As a fun coincidence, I heard about this story because the lead researcher in the wild bee population was my entomology professor sophomore year. Let’s talk food

There’s no denying duality when it comes to any life phenomenon. Let’s take growth and decay, abundance and poverty, negligence and responsibility. Bring food into this equation and you cannot have a greater marker of different standards of living across the globe. So while we were taking stock of produce harvested from our “edible” gardens at Cardamom County and Xandari Pearl, the conversation happened to linger on food security. And then someone mentioned France recently banning all supermarkets from spoiling or throwing away unsold food.

The measures are part of wider drive to halve the amount of food waste in France by 2025. According to official estimates, the average French person throws out 20kg-30kg of food a year – 7kg of which is still in its wrapping. The combined national cost of this is up to €20bn. Of the 7.1m tonnes of food wasted in France each year, 67% is binned by consumers, 15% by restaurants and 11% by shops. Each year 1.3bn tonnes of food are wasted worldwide.

There is a buzz in the air in Washington, and it’s about honeybees. Concerned about an alarming decline in honeybee colonies, the Obama administration has released a National Strategy to Promote the Health of Honey Bees and Other Pollinators.

NPR’s Dan Charles says the strategy, despite its rather bureaucratic title, is pretty straightforward: “The government will provide money for more bee habitat and more research into ways to protect bees from disease and pesticides.The Environmental Protection Agency also will re-evaluate a class of insecticides called neonicotinoids … which are commonly used on some of the most widely planted crops in the country.”

Sometimes reading, like taking vitamins or swallowing that medicine, must be done without a spoonful of sugar. Sometimes we would rather read fairy tales and happily ever after while other times we must read the news, with the detailed pictures and some thoughtful analysis, to know what our future might look like, to get us thinking about what we might do about it if we do not like what we see. This is a must read that fits into the latter category:

…The air smelled sweet and vaguely spoiled, like a dog that has got into something on a hot day. When the wind blew, it veiled the mountains in dust and sent puckered waves to meet the frothy white flow from the pipe. The sea, which is called the Salton Sea, is fifteen times bigger than the island of Manhattan and no deeper in most places than a swimming pool. Since 1924, it has been designated as an agricultural sump. In spite of being hyper-saline, and growing saltier all the time, the sea provides habitat to some four hundred and thirty species of birds, some of them endangered, and is one of the last significant wetlands remaining on the migratory path between Alaska and Central America. The idea of the project is to help restore sensitive mountain habitats such as upland heaths and flushes – damp areas – by gently coaxing and nudging sheep away from such areas.

Cattle-ranching, logging, mining, highways, hydroelectric dam projects, oil and gas, soy, oil palm. . . These are what first come to mind to many people when thinking about how the Amazon is being destroyed, but what about chocolate too?

NGO Environmental Investigation Agency (EIA) released a report on 7 April mainly about monoculture oil palm plantations, which it describes as a “major new threat to Peruvian forests.” The report, Deforestation by Definition, focuses on the Romero Group, Peru’s “largest economic actor”, and what it calls the “Melka Group”, a network of 25 companies recently established in Peru and controlled by businessman Dennis Melka, a major player in the destructive oil palm industry in Malaysia.

According to EIA, two “Melka Group” companies have illegally deforested an estimated “nearly 7,000 hectares” of mainly primary rainforest in Peru over the last three years, and others have acquired at least 456 “rural properties” and requested the government set aside another 96,192 hectares.

California’s devastating drought is focusing attention on the water footprint of various foods — particularly delicious, delicious almonds, which require about a gallon of water each.

As we “plant to the menu” at Marari Pearl we’re constantly looking at the inspiring stories of people who make the choice to stay connected with the land and the food we eat.

We met “Farmer D” when we participated in a newly created community garden while living near Atlanta. He and his family are now sowing seeds in California, and we know that he continues to spread the fruitful good word.

Chocoholics have plenty to celebrate in this age of chocolate renaissance. But also plenty to worry about. Conservation is the answer to some of those worries, and collective action is the mechanism by which some of the conservation must be carried out. This article, again from “the salt” thanks to National Public Radio (USA), gives us one example:

Walk into a row of greenhouses in rural Britain, and a late English-winter day transforms to a swampy, humid tropical afternoon. You could be in Latin America or Sub-Saharan Africa. Which is exactly how cocoa plants like it.

“It’s all right this time of year. It gets a bit hot later on in the summer,” says greenhouse technician Heather Lake as she fiddles with a tray of seedlings — a platter of delicate, spindly, baby cocoa plants.

Since she started working here at the International Cocoa Quarantine Centre, eating chocolate doesn’t feel the same.

“You certainly know all the work that goes into producing that chocolate bar, and all the potential threats that could be there in the future,” Lake says.
